Rally to Restore Sanity and/or Fear

Jen challenged me to write one blog a day while I am home in LA, so today shall be Day One. We'll see how this works out...a short attention span makes this really hard sometimes.

It's been a very eventful couple of months, which means there are a ton of photos I want to post up...so I'll start with the Rally. While many brave souls in DC were out attending the Rally to Restore Sanity and/or Fear, I stayed indoors to avoid the crazy crowds that I saw on TV in the morning. Instead, we enjoyed an awesomely relaxing day baking and watching the entire Rally live on Comedy Central. Nothing can really beat a day that produced 5 loaves of bread, especially when we're talking about 2 different kinds!

Pumpkin Bread!

*healthy version (credit goes to Chibi Chef), make these adjustments*
(1)100% whole white wheat instead of white flour
(2)half the oil with applesauce
(3)1 C brown sugar and 1/2 C white sugar
(4)apple juice instead of water
(5)doubled the ginger

We made the healthy version...obviously it doesn't taste like coffee shop pumpkin breads since it doesn't have loads of sugar but it is still really good. You can eat it guilt-free!

I personally think coffee is a must. So after you're done baking, please make sure to make some coffee.
